Happy Cookie Friday: pasta & co

486This week’s Happy Cookie Friday is brought to you by the apricot bars at pasta & co.  Wednesday I figured it was time to get out and find a cookie for Friday, so I got in my car and drove to the nearest pasta place I could find.  Ok, so really I was in the U-District doing a little shopping for a pending trip to Spokane to visit the loverly Sam Kam Family and spotted potential.   The pasta & co store in the U-Village is just about the cutest little deli/bakery/pantry this side of the Skagit.  It’s packed with tasty food stuffs to bring home or eat in the store.  The only choice in the cookie department were macaroons and bars, but since I’m a firm believer that bars are the lazy man’s cookie, those qualified.  I was thiiis close to going with the coconut macaroon simply because I loved the conical shape it had to it, but I don’t know what kind of no-class heathen would use the same cookie two Fridays in a row.  We also picked up a couple of cupcakes.  Because that’s the rule, man.

  1. Oh wow. I haven’t been in that store in years (and never THAT particular one); it looks amazing! Totally my kinda place. And I, too. love bar cookies. They are like half cake/half cookie, lazy on both fronts. HAH!

    Well, I wish I would have know my picture was being taken as I was asking for the Apricot Bar… I might have smiled as I always do when in the U Village Pasta & Co.! Any chance you got the recipe?

  5. Deb, I didn’t ask for the recipe because that might mean I’d be obligated to try baking them at least once. And then I’d have a whole mess of apricot bars in my house and there’d be no rest until they were gone. And beware the next time you’re purchasing anything close to a cookie around town–you could be on Cookie Friday camera.

    Natasha, I did get the recipe! If you ever travel towards the Sumner/Edgewood area on a Happy Cookie Friday, let me know. I’ve been told I make pretty good cookies and a speciality brownie!
